We run the migration in a test environment first, compare record counts, and spot-check the content before anything moves in production.
Do we need to shut down the system during the migration?
Usually not entirely. We plan the migration so downtime is as short as possible, often just a few minutes at the actual cutover.
What kinds of systems can you migrate from?
